Sautee? I always boil them. Did you mean simmer?
Sorry, yes, I meant simmer. I was thinking about french pea soup with boar bacon, and mixed them up.
That would be easy too, take the soaked peas, make a Mirepoix, add a ham hock or some bacon and some garlic, simmer an hour or two . . .
