The top 2 should be:

1. Forest Griffin vs Stephen Bonnar (exciting fight that launched UFC into spotlight)
2. Royce Gracie vs everyone at UFC 1(showed the power of BJJ to the MMA world)

Royce Gracie, but only in early UFC not the later ones without question! He made the sport.

Griffin I would say is 2 only because you wouldn't have that fight if it wasn't for Gracie but it brought the UFC to the level it is today.
